Method
For the Puff Pastry
- In a food processor, add the all-purpose flour and salt and give it a pulse.
- Cut the butter in quarter inch cubes and add to the food processor. Give three-four intermittent pulses so that the butter combines in the flour.
- Now, add the water in three parts and carry on with the intermittent pulses until you see the dough coming together.
- Empty the food processor on your clean counter and bring it together in a ball. Wrap with saran wrap and freeze it for 30-40 mins.
- Take it out and on your well-floured counter roll it out in a rectangle shape (mine was not exact).

- Fold in thirds and fold again. Wrap and freeze the dough again for 30 mins.I continued this process 3 times.

- Finally ,take out the dough from the freezer and cut a 5-inch by 3-inch piece of rectangle shaped dough.
- Mix the cinnamon and sugar well.
- Fill it with a combination of granulated sugar and cinnamon and fold it in thirds again.
- Cut thin pieces and put on a parchment lined cookie sheet and sprinkle some more of the cinnamon sugar on top.
- Bake in a 400 degrees pre-heated oven for 8 mins.
- Take the cookie sheet out and flip the cookies and bake for another 5 mins.
- Your Palmier cookies are ready to serve!!
Notes
Freeze the bowl and the blade of the food processor for 10 mins before you start the process.
I keep the normally refrigerated butter for 10 mins in the freezer before cutting it into quarter inch cubes. This is how my mom does it.
I say intermittent pulses because we don’t want anything heating up with continuously running the food processor.
