Method
For Slider Buns
- In a small bowl, add the lukewarm water, 2 tsp of sugar and the yeast. Mix and let it stand for 10 mins. The yeast will activate the liquid will become foamy.
- In another bowl, whisk together the milk, egg and 3 tbsp of melted butter.
- Pour the above mixture in the foamed yeast.
- In a big mixing bowl or the bowl of your stand mixer, add the bread flour and salt.
- Pour the liquid and keep stirring with a big spoon if you are not using the stand mixer. I did not use it. If you are using the stand mixer use the dough hook and start on slow and then medium speed. Goon for 6-8 mins.
- I mixed the dough and then dropped it on a floured space on the counter. Top and kneaded with my hands for 10 mins. I pushed with the heel of my palm and then stretched again in between that. The dough should be smooth and stretchy.
- Once kneaded, store in a big greased bowl and keep in a warm place. I also covered the bowl with plastic wrap. Give it 11/2hours to proof.
- It will rise twice in volume. Then punch the dough and deflate and knead again for 3-4 mins.
- Line a cookie sheet with parchment paper.
- Make small balls out of the dough. Make sure they are more or less uniform. I got 15 slider buns from my dough.
- Place the dough balls on the cookie sheet 2 inches apart and return to a warm place.Cover lightly with a clean cloth kitchen towel and then rise for 30 mins again.
- In the meantime, pre-heat oven to 375 degrees F.
- Takeout the cookie sheet after 30 mins. The dough will increase in size. Now take the remaining melted butter and lightly grease the dough balls with a brush.
- Top with sesame and poppy seeds.
- Put the cookie sheet in the oven for 20 mins or until they become a gorgeous golden brown.
Chicken Sausage Silders
- Take the sausage meet out of the casings.
- Take two tbsp of meat and make a ball out of it. I could get about 10.
- Warm an iron skillet and grease it with a tbsp of vegetable oil ( add more later if needed).
- Put the balls on it and lightly flatten with a spatula. Cook for 2 mins on each side to get a nice brown and then lower the heat and cover the skillet and cook for another 4 mins.
- Take them out and serve with the slider buns and the traditional fixings. I served the sliders with avocado, grilled yellow onions (cut them in discs and browned in the same skillet as the sliders for a couple of mins on each side), tomatoes and sriracha mayo ( mix the mayo and sriracha sauce together.
