In a mixing bowl, sift the flour. Now add all the ingredients for the cookie and mix to a smooth dough. Making a smooth dough is very important. Otherwise the cookies will have cracks in them. This will take a good 10 mins.
Now grease your hands and make small balls. You have to make sure that the balls are more or less the same size. Roll them between the palm of your hands and lightly press the top to flatten it. I got 20 cookies for 10sandwiches.
Line two cookie sheets with parchment paper and rest the cookies on them about 2 inches apart.
Pre heat oven to 375 degrees F. Bake the cookies in a middle rack for 15 mins. Be careful not to brown them.
Take them out from the oven and cool them for 30 mins.
After 30 mins, I took a round piping tip and very gently scooped out a little from the cookie to make a slight hole in the center. Save the crumbs that you scooped out.
Now for the filling, mix the softened cream cheese, vanilla extract, powdered sugar and Nutella. Add the crumbs and mix it in.
Add the above filling in a piping bag and slowly fill the cavities in the cookie halves. Fill only one of them.
Take the other half and put on top and make the sandwich cookies.
In a couple of bowls, divide ΒΌ cup of milk.Add orange gel color to one and red gel color to another. With a clean paint brush, slowly paint the cookies different shades of orange and red to represent a peach.
On a plate, pour the granulated sugar and roll the cookies in them. Set aside.
Lastly, I used some mint leaves and decorated the cookies with them to replicate real peaches.
