Homemade Slider Buns from scratch and chicken sausage sliders, and that was our Sunday lunch! Mom kind of threw me a challenge to cook lunch. With the COVID 19 situation, we all are home and I can understand just how tired she is cooking all our meals and then also managing her full-time job. So of course, I wanted to step up and accept her challenge.

But the problem is my mom is a cleaning freak and according to her I make a mess. So, I promised her I would also clean up post cooking the chicken sausage sliders. And I indeed made her very happy.

I love baking as I have already told you. And I love burgers! There was a pack of Trader Joe’s Italian fresh and uncooked chicken sausage in our freezer. I have seen Mom make a ton of stuff with it. So, I thought why not sliders. But we did not have burger or slider buns at home and I did not want to send Dad outside to get it. So, I made them at home!

The steps are easy. You make the yeast dough first and wait for it to rise. And then again knead it and shape the buns and go for a second rise and then just bake them. But making the buns at home is so satisfying. I am glad I could put together this meal for my family!

Fresh Slider Buns and Chicken Sausage Sliders

Ingredients
  

Slider Buns
  • 1 packet Dry Active Yeast
  • 1/2 cup Lukewarm water
  • 1/4 cup Milk
  • 2 Egg 2 small eggs or 1 large
  • 1/4 cup Melted Butter
  • 3 tbsp Sugar
  • 1 tsp Salt
  • 3 1/4 cups Bread Flour use normal AP flour if you don't have bread flour
  • 1/2 tsp Sesame Seeds To top Buns
  • 1/2 tsp Poppy Seeds To top Buns
Sausage Sliders
  • 12 oz Fresh Italian Chicken Sausage 12 oz pack from Trader Joe's
  • 2 tbsp Vegetable Oil
Slider Fixings
  • 1 Avocado large
  • 1 Tomato large
  • 1 Yellow Onion large, grilled
  • 1/4 cup Mayonaise
  • 2 tbsp Sriracha Sauce

Method
 

For Slider Buns
  1.  In a small bowl, add the lukewarm water, 2 tsp of sugar and the yeast. Mix and let it stand for 10 mins. The yeast will activate the liquid will become foamy.
  2. In another bowl, whisk together the milk, egg and 3 tbsp of melted butter.
  3. Pour the above mixture in the foamed yeast.
  4. In a big mixing bowl or the bowl of your stand mixer, add the bread flour and salt.
  5. Pour the liquid and keep stirring with a big spoon if you are not using the stand mixer. I did not use it. If you are using the stand mixer use the dough hook and start on slow and then medium speed. Goon for 6-8 mins.
  6.  I mixed the dough and then dropped it on a floured space on the counter. Top and kneaded with my hands for 10 mins. I pushed with the heel of my palm and then stretched again in between that. The dough should be smooth and stretchy.
  7. Once kneaded, store in a big greased bowl and keep in a warm place. I also covered the bowl with plastic wrap. Give it 11/2hours to proof.
  8.  It will rise twice in volume. Then punch the dough and deflate and knead again for 3-4 mins.
  9. Line a cookie sheet with parchment paper.
  10. Make small balls out of the dough. Make sure they are more or less uniform. I got 15 slider buns from my dough.
  11. Place the dough balls on the cookie sheet 2 inches apart and return to a warm place.Cover lightly with a clean cloth kitchen towel and then rise for 30 mins again.
  12. In the meantime, pre-heat oven to 375 degrees F.
  13. Takeout the cookie sheet after 30 mins. The dough will increase in size. Now take the remaining melted butter and lightly grease the dough balls with a brush.
  14. Top with sesame and poppy seeds.
  15. Put the cookie sheet in the oven for 20 mins or until they become a gorgeous golden brown.
Chicken Sausage Silders
  1. Take the sausage meet out of the casings.
  2. Take two tbsp of meat and make a ball out of it.  I could get about 10.
  3. Warm an iron skillet and grease it with a tbsp of vegetable oil ( add more later if needed).
  4. Put the balls on it and lightly flatten with a spatula. Cook for 2 mins on each side to get a nice brown and then lower the heat and cover the skillet and cook for another 4 mins.
  5. Take them out and serve with the slider buns and the traditional fixings. I served the sliders with avocado, grilled yellow onions (cut them in discs and browned in the same skillet as the sliders for a couple of mins on each side), tomatoes and sriracha mayo ( mix the mayo and sriracha sauce together.
