Palmier in French means Palm Tree leaf and I guess the shape somehow resembles that! It is one of my favorite cookies!! Flaky puff pastry, baked to perfection, with cinnamon sugar. When I was little, I used to call Palmier Cookies butterfly cookies because to me they looked like butterflies!!

Palmier cookies, said to have originated in Vienna, is probably the easiest cookie to make if you are using pre-made puff pastry.

In my case, I did not have puff pastry at home and with the lockdown, there was no way I could have convinced my parents to go to the grocery store just to get puff pastry. So, I made the puff pastry at home by myself. It isn’t hard!! You just have to be persistent.

I wanted to put together a box of all French cookies and hence I had to make the signature Palmier cookies.

And once again, I want say that it is totally fine to do this recipe with store bought puff pastry dough. Since I did not have puff pastry at home, I made it from scratch. But this cookie is just so convenient and quick if you have puff pastry dough in your freezer!! Give it a try and let me know if you like the recipe!!!

French Palmier Cookies

French Palmier Cookies

An easy and traditional melt-in-your-mouth recipe of my favorite Palmier Cookies.

Ingredients
  

For the Puff Pastry:
  • 1 cup All Purpose Flour
  • 1/4 tsp Salt
  • 10 tbsp Butter
  • 1/3 cup Ice Cold Water
For the Palmier Cookies
  • Puff Pastry
  • 2 tbsp Granulated Sugar
  • 1 tsp Cinnamon

Method
 

For the Puff Pastry
  1. In a food processor, add the all-purpose flour and salt and give it a pulse.
  2. Cut the butter in quarter inch cubes and add to the food processor.
    Give three-four intermittent pulses so that the butter combines in the flour.
  3. Now, add the water in three parts and carry on with the intermittent pulses until you see the dough coming together.
  4. Empty the food processor on your clean counter and bring it together in a ball. Wrap with saran wrap and freeze it for 30-40 mins.
  5. Take it out and on your well-floured counter roll it out in a rectangle shape (mine was not exact).

  6. Fold in thirds and fold again. Wrap and freeze the dough again for 30 mins.
    I continued this process 3 times.

  7. Finally ,take out the dough from the freezer and cut a 5-inch by 3-inch piece of rectangle shaped dough.
  8. Mix the cinnamon and sugar well.
  9. Fill it with a combination of granulated sugar and cinnamon and fold it in thirds again.
  10. Cut thin pieces and put on a parchment lined cookie sheet and sprinkle some more of the cinnamon sugar on top.
  11. Bake in a 400 degrees pre-heated oven for 8 mins.
  12. Take the cookie sheet out and flip the cookies and bake for another 5 mins.
  13. Your Palmier cookies are ready to serve!!
     

Notes

Freeze the bowl and the blade of the food processor for 10 mins before you start the process.
I keep the normally refrigerated butter for 10 mins in the freezer before cutting it into quarter inch cubes. This is how my mom does it.
I say intermittent pulses because we don’t want anything heating up with continuously running the food processor.
