
I got these Peach Cookies right after my second attempt. These were the prettiest cookies I’ve seen on the internet in a while. Basically, they are sandwiched cookies which are beautifully colored and coated with granulated sugar. They are delicious and just uplifts your spring tablescape. These Cookies do involve a little time and effort. I would not say they are quick but if you follow the recipe, they are not that complicated to make. I hate super complicated recipes, so this recipe completely suits my needs and purposes. And of course, they are really pretty as you can see.

However, this recipe for these cookies utilizes food coloring. In the future, I would like to experiment with natural colors like turmeric and raspberry powder so that the recipe is completely natural. But today I just went ahead and used food coloring for the sake of time.

We grow a lot of peaches in our garden. Plus, our neighbors’ fruit laden branches grow for the most part in our yard. So, Mom and I are always looking for recipes utilizing peaches. The peach season have not started yet and these peach cookies just look like peaches. There are no peaches involved in this recipe in any capacity. Some recipes do use peach extract and peach jam in these cookies, but I did not use any. I just used a combination of cream cheese (my all-time favorite) and Nutella to fill them.

Once we grow peaches this year, it will be interesting to see how I can incorporate real peaches in this recipe. Enjoy the recipe and when you are done making them, do click some gorgeous pics of them. They deserve to be photographed well!

Spring Peach Cookies

Method
- In a mixing bowl, sift the flour. Now add all the ingredients for the cookie and mix to a smooth dough. Making a smooth dough is very important. Otherwise the cookies will have cracks in them. This will take a good 10 mins.
- Now grease your hands and make small balls. You have to make sure that the balls are more or less the same size. Roll them between the palm of your hands and lightly press the top to flatten it. I got 20 cookies for 10sandwiches.
- Line two cookie sheets with parchment paper and rest the cookies on them about 2 inches apart.
- Pre heat oven to 375 degrees F. Bake the cookies in a middle rack for 15 mins. Be careful not to brown them.
- Take them out from the oven and cool them for 30 mins.
- After 30 mins, I took a round piping tip and very gently scooped out a little from the cookie to make a slight hole in the center. Save the crumbs that you scooped out.

- Now for the filling, mix the softened cream cheese, vanilla extract, powdered sugar and Nutella. Add the crumbs and mix it in.
- Add the above filling in a piping bag and slowly fill the cavities in the cookie halves. Fill only one of them.
- Take the other half and put on top and make the sandwich cookies.
- In a couple of bowls, divide ¼ cup of milk.Add orange gel color to one and red gel color to another.
- With a clean paint brush, slowly paint the cookies different shades of orange and red to represent a peach.

- On a plate, pour the granulated sugar and roll the cookies in them. Set aside.

- Lastly, I used some mint leaves and decorated the cookies with them to replicate real peaches.
